Poor Man Crab Cakes Recipe (Zucchini Cakes)
2 cups finely shredded fresh zucchini
2 large eggs, well beaten
1 cup bread crumbs
1/4 cup bread crumbs
1 tbsp. butter, softened
1/2 tbsp. Old Bay seasoning
1/2 tbsp. parsley flakes
In a large bowl, combine together all of the above ingredients, except for the 1/4 cup of additional bread crumbs. Cover bowl and refrigerate for 4-6 hours. Remove from refrigerator and let stand at room temperature for 5 minutes. Shape mixture into cakes with your hands. Roll each cake into the additional 1/4 cup of bread crumbs.
Place cakes into a deep fryer or a large skillet with hot vegetable oil and fry until done (golden brown on the outside). Remove and serve immediately. You can garnish them with whatever you like.
