Last weekend we whipped together this breakfast casserole and my family loved it! It's really quick and easy to prepare and then you toss it into the oven to bake. It doesn't take very long at all and tastes delicious! If you are pressed for time in the morning...you can prepare the casserole the night before and refrigerate. Remove from oven and let stand for 10 minutes at room temperate and then place it into a preheated oven to bake.
Cheesy Scrambled Egg & Green Pepper Breakfast Casserole Recipe
8 large eggs
1/4 cup fresh milk
1/8 cup green bell peppers, finely chopped
3 tablespoons onion, finely chopped
3 slices cooked bacon, crumbled
3 slices of honey ham luncheon meat, chopped up into small pieces
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup shredded cheddar cheese
In a large mixing bowl whip together the eggs and milk using a wire whisk. Blend in the chopped bell peppers, chopped onion, crumbled/cooked bacon, chopped honey ham luncheon meat, salt and ground black pepper. Gently stir in the shredded cheese.
Preheat oven to 350 degrees F. Spray the inside of a 2 quart glass casserole baking dish with non-stick cooking spray. Pour the egg mixture into the casserole dish. Cover. Bake in a preheated oven for 10 to 14 minutes or until done. If you like your casserole with a crustier top, remove the baking dish lid the last 2 minutes of the baking time. Remove from oven and serve immediately.
