If you enjoy eating some thick cut pork chops along with scallop potatoes, I think you will enjoy this easy recipe and will serve 4 making it a great small family dinner.
Smoked Pork Chops and Scallop Potatoes Recipe
4 cups sliced raw potatoes
1/2 cup sliced onion
2 Tablespoons flour
salt and pepper to taste
1 1/2 cups heated warm milk
4 lean pork chops
Place a layer of potatoes and sliced onion in a greased 2 quart casserole dish. Sprinkle chops with a little flour, salt and pepper to taste. Repeat layers, ending with potatoes and onion on top. Pour heated up warm milk over the top. In a skillet, over medium heat, brown the pork chops on each side. Remove chops from skillet and place in casserole dish over the potato mixture. Cover and place in a preheated 350 degree oven for 45 minutes, uncover and bake an additional 15 minutes or until done.
