Today I am sharing with you a vintage recipe from the late 1960's that was given to me by my great aunt. She used to make these Scotch Scones all of the time for us kids when we were little. They are super easy to make and taste delicious. This recipe will make 10-12 scones.
Scotch Scones Recipe
2 cups all-purpose flour
1 tbsp. granulated sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 cup vegetable shortening
1 large egg yolk
1/3 cup light cream
1 large egg white
Sift together the flour, 1 tbsp. sugar, baking powder and the salt. Cut in the vegetable shortening with a pastry blender. Beat the egg yolk, add in the light cream and then mix that into your dry ingredients until well blended. Roll out the dough onto a lightly floured dough board. Cut dough in 2" triangles and place them onto a nonstick baking sheet or silicone lined baking sheet. Beat the egg white slightly with a wire whisk and then brush the egg white on top of the dough triangle, sprinkle the remaining sugar on top. Bake in a pre-heated 375 degree oven for 10-14 minutes or until golden. Serve them warm.
